Simple everyday ingredient make this really fast and faboulous rice dish. I have tried making this using several variety of vegetables. Try it with your own favourites and see how you like it
THAI VEGETARIAN FRIED RICE
INGREDIENTS
2 tbsp oil
2 garlic cloves minced or finely chopped
1/3 – 1/2 cup mixed cooked beans, eg snow peas, green beans ( to cook them, blanch them in boiling water for a couple minutes and take them out and put them in icy water to retain cruchiness and color)
2 tbsp diced carrots
2 tbsp diced tomatoes
2 tbsp diced pineapple
1 tbsp light soy sauce
1 tbsp dark soy sauce ( dark soy sauce has sugar added to it, its thick and perfect for thai food, easily available at any asian grocery store)
1 tsp sugar
1/2 tsp freshly ground black pepper
2 cups steamed rice ( preferably a day old)
cilantro leaves for garnishing

10 – 15 minutes
DIRECTIONS
In a wok or a frying pan, heat the oil and fry the garlic until golden brown. Stirring constantly, add each of the remaining ingredients one at a time, except for the cilantro leaves. Stir thoroughly until the rice is heated through, If you would like to add egg to your fried rice, take another small pan and in 1 tsp of oil scramble an egg, when cooked add it to the rice. Garnish with cilantro and serve.
COMMENTS
If you would like to make the fried rice hot, slit 1-2 thai green chillies and add with the veggies.
If you would like to add chicken or shrimp to the fried rice, cut chicken into small strips, add to pan after garlic on high heat and cook for about 5-6 minutes till fully cooked, then add the rest of the ingredients.
A day old rice are perfect for fried rice because they do not clump.
